When Life Gives You Apples……
Two boxes of apples were delivered to Oak Table mid-afternoon on Wednesday. What to do? What to do? One of our faithful volunteers and new Board member Allison Wilcox went to work and did what needed to be done......she made applesauce! Making good use of the donations we get is one of our top priorities. Produce and vegetables are challenging because there is a very small window where they are at their peak freshness. Our volunteers chop, peel, blanch, and freeze what we can't use in the lunch that day, to make sure we squeeze everything we can out of a donation. Sometimes this requires it be done after drop-in hours. It costs in excess of $100,000 each year to provide lunch to our approximately 400 guests each week. We count on at least $80,000 of that to come in as donations. Thanks to our volunteers for helping us be good stewards of everything we are given!
